We all like food.
Sometimes i feel in a rut.
i cook the same meals in endless rotation.
Recently a new item came into our selection and it is delicious.
My wife Paula found a recipe for baked feta pasta.
It is SO GOOD that i had to share it here in my bLog.
BAKED FETA PASTA
INGREDIENTS:
12 oz package of multi color spiral Rotini pasta
3/4 cup olive oil
1/2 tsp salt
1/2 tsp Italian seasoning
1/2 tsp parsley
1/2 tsp coarse ground pepper
1/2 tsp red pepper flakes
1/2 onion chopped
3 cloves garlic chopped
2 pints cherry tomatoes (from Paula’s garden)
1 8oz block of feta cheese
1/2 cup of fresh basil leaves chopped
INSTRUCTIONS:
Set a little olive oil aside then pour the rest into an 8.5” x 12” x 2” deep pan.
Sprinkle salt, Italian seasoning, parsley, pepper and red pepper flakes into the oil and mix in the pan.
Add chopped onions and garlic and mix to combine.
Add cherry tomatoes and mix to coat.
Clear a space and put the feta block in the center of the pan.
Coat the feta with the olive oil you set aside.
Place pan in center rack of a 400° oven for 40 minutes.
While feta is baking, prepare the Rotini pasta on the stove top.
Check to see if tomatoes are burst and the feta is golden.
If not, bake 5-10 minutes more.
When tomatoes and feta are done remove from oven and add pasta.
Stir pasta, tomatoes and baked feta together in the pan.
Sprinkle the top with chopped fresh basil.
Serve it now.
The result is cheesy, tomatoey deliciousness.

Clever article with the pasta recipe which I intend to try. Next year I hope to have been luck with my tomatoes as home grown ones are the best!

Recipe sounds divine , but the song is superb. My grandchildren listened to Pink Martini instead of lullabys; thanks grandma. Saw them in person this year and they still don’t disappoint.
